Losos u Paketu / Baked Salmon Packets

While we’re not big seafood fans, we do enjoy fish at least once per week for the health benefits. Growing up, fish was only eaten in our home during lenten holidays so it was a bit of a rediscovery process for me when I started cooking it (and not frying it for a change). While we do enjoy some really good beer-battered cod now and then, our go-to meal for lenten holidays and just because these days is Losos u Paketu, baked salmon, or Salmon en Papillote if you’d like to get technical.

While this recipe may be called Baked Salmon, you can actually use any fish you’d like. The technique is really what sets this recipe apart not necessarily the fish itself, so use your favorite seafood when trying this out. As far as spices go, we love Old Bay seasoning on seafood so that’s what I use most often. And lemon. We LOVE lots of lemon. In fact, not only do I bake the fish with a few slices of lemon, we squeeze plenty of lemon juice on top right before serving.

I discovered this technique many years ago mostly and fell in love with it because of how easy the cleanup was. And also because my house does not end up smelling like fish after our meal. That was probably even more important for me than the cleanup aspect 🙂 🙂 Because the fish is contained in this pretty little packet, you can’t even smell it! How cool is that?

We love our baked fish with a fresh salad or even potato salad. Sometimes, I like to bake some fresh vegetables with the fish itself like asparagus. This dish is perfect for meal prep and easy lunches throughout the week. I love to make a batch of these and refrigerate until ready to eat. It’s probably one of my quickest meal options.

I hope you give this recipe a try very soon, but especially as the days get warmer and you don’t feel handing out by the stove too long. Also because it’s a light and refreshing meal if you’re looking for something quick that won’t weigh you down.

Losos u Paketu / Baked Salmon Packets

A healthy and easy meal with quick and easy cleanup

Ingredients

  • 2 pieces of salmon, cod, or any other fish or seafood you like

  • 1 lemon + more for garnish

  • Seasoning (we love Old Bay), to taste

  • 2 tablespoons (30 ml) Olive oil

  • Salt, to taste

  • Black pepper (biber), to taste

  • Vegetables, optional

Directions

  • Preheat oven to 400F (200 C).
  • Wash your fish and pat dry with a paper towel.
  • Place a sheet of parchment paper on your work surface that’s about twice the size of your piece of fish. Fold it in half to crease it, then open it and lay flat.
  • Place your piece of fish on one side of the parchment paper. If using vegetables, lay the vegetable down first and then place the fish on top.
  • Slice the lemon in half, then slice one half of the lemon into slices. Keep the other half whole.
  • Sprinkle your fish with salt, black pepper, and any other seasoning you’d like. Then drizzle the oil over the fish. Lastly, squeeze lemon juice over the top of the fish from the lemon half you just cut.
  • Place the slices of lemon on top of the fish and drizzle some additional olive oil on top of everything.
  • To close, fold the parchment paper over the fish. Then, starting at one end of the paper, fold the edges of the parchment paper inwards, making small overlapping pleats to seal the open sides and to create a half-moon-shaped packet as you go. See photos above. Cut a slit in the paper for steam to escape. Repeat with the 2nd piece of fish.
  • Place your salmon packets on a baking sheet and bake for 15-20 minutes or until cooked to your liking.
  • Place each packet on a plate and serve the fish directly from the packet. Serve with a few wedges of lemon as well.
