Zrno Kafe/Coffee Bean Cookies

Today I’m sharing a cookie recipe that I’ve always been fascinated by. Zrno Kafe or coffee bean cookies have been around for many years and can be found on many cookie trays. Usually made much smaller than the version that I’m sharing today, these are oversized and intended as 1 per serving. You can definitely make these smaller of course, but this time I made them larger for photo purposes.

These cookies are traditionally made vegan and served on vegan cookie trays during posne slave. I make them year-round because they’re THAT good. I also love to make these for someone who I know is a coffee addict and it’s always well received. Did I mention that actual coffee is also an ingredient? They don’t just look like coffee beans, they also have a rich coffee flavor as well. A treat truly made for coffee lovers!

As I’ve mentioned, these are usually served as bite-sized cookies so this recipe will yield many cookies if made smaller. I made mine much larger and was able to get about 15 total. Whatever the size, I know you’ll love them as soon as you taste them. In this recipe, I used plain ground coffee beans since I have an espresso machine. But you can use ground Turkish coffee, Nescafe instant coffee, or whatever ground coffee you enjoy and have on hand.

A perfect sweet treat for the coffee lover in your life!

Ingredients

  • 1 cup (200 g) sugar

  • 1 tablespoon vanilla sugar (1 kesica)

  • 1/2 cup (100 ml) water

  • 1 cup (130 g) walnuts, ground

  • 2 cups (200 g) Plazma/Lane biscuits, ground

  • 1 tablespoon (7.5 g) cocoa powder

  • 1 teaspoon (6 g) ground coffee

  • 1 stick (113 g) margarine (or butter if not making vegan)

  • Chocolate Coating
  • 1/2 cup (100 g) baking chocolate (bar or chocolate chips)

  • 3 tablespoons (45 ml) oil

Directions

  • To a large mixing bowl add the ground Plazma, walnuts, cocoa powder, and coffee. Stir to combine and set aside.
  • In a saucepan add the margarine or butter, sugar, vanilla sugar, and water. Heat on medium heat until the margarine/butter and sugar are completely melted and the liquid begins to boil. Reduce the heat slightly when the mixture begins to boil and let it boil for 2-3 minutes until it the mixture reduces by 1/3. This happens pretty quickly so you shouldn’t need to boil it longer than 3 minutes.
  • When the mixture has slightly reduced, turn off the heat and add the liquid mixture to the dry ingredients. Stir everything well until all the ingredients are combined into a chocolate cookie dough. If you notice the cookie dough is too wet, add some more ground Plazma keks. You’re looking for a dough that is easily moldable but yet firm enough to hold its shape.
  • Place the bowl in the refrigerator for at least 30 minutes until the mixture is completely cooled and has firmed up slightly. This makes it easier to shape the cookies.
  • After the mixture has chilled, remove the dough from the refrigerator. Take a piece of dough and roll it into a ball in your hands. Then, press the ball of dough and shape in an oval shape. Next, take a toothpick and press it in the middle of the oval shape to make a coffee bean-like indent. Place your shaped cookie on a plate or tray and continue this step until you run out of dough.
  • Place the formed cookies in the refrigerator while you make the chocolate coating.
  • To a saucepan add the chocolate and oil. Melt the chocolate completely and remove from the heat.
  • Dip each cookie in the chocolate with the help of a fork. Place back on the tray or plate and refrigerate until ready to serve.

Notes

  • If you’d like, add a tablespoon of Nutella to your cookie dough for even more deliciousness!
