Brze Pogače Sa Puterom/Quick Butter Rolls

Every so often I get a request to make my super easy buttery bread rolls. These requests usually take place as the weather starts to turn and more comfort foods find their way onto our table. Don’t get me wrong, these rolls are not only great with savory dishes. In fact, they’re probably even better slathered with Nutella or Eurocream. And so it was just a matter of time before I posted this super simple recipe.

Every time I make these, I remember the smell of fresh bread I’d have every morning when visiting back home. My mother-in-law bakes a fresh batch every other morning just in time for breakfast in her wood-burning oven. I don’t know if there is anything more delicious than fresh bread, some feta cheese, smoked meats, and a couple of fried eggs.

One of the great things about these rolls is that they don’t require any kneading. That’s right, just enough to bring the flour and liquid ingredients together and some additional forming of the dough before baking. The soft, fluffy, cloud-like texture is a result of not over-kneading so it’s a win-win if you ask me. But I do need to mention that this dough is very sticky and tough to work with, so have plenty of flour handy to dust your work surface and your hands.

This bread resembles more of a Pogača than bread as it contains eggs, milk, and butter in the dough. I think it’s worth mentioning since it’s not a classic bread recipe. This dough is richer and oh so familiar if you’ve ever had a pogača. And as with any rich bread like this, nothing goes better than a decadent spread. My favorite? Kajmak of course!

These rolls are best enjoyed the same day for peak tastiness. However, if you have some leftover you must store them in a plastic bag or airtight container until consumed. If you leave them out they will dry up. Make sure to pop them in the microwave for a couple of seconds before enjoying the leftovers, they taste like they just came out of the oven this way!

An old traditional favorite in roll format. Perfect for any meal!

Ingredients

  • 5 cups (720 g) all-purpose flour + more for dusting

  • 1 tbsp (10 g) active dry yeast

  • 2 tablespoons (25 g) sugar

  • 1/2 cup (125 ml) warm water

  • 1.5 teaspoons (9 g) salt

  • 1 cup (250 ml) warm milk

  • 4 tablespoons (57 g) unsalted butter (melted) + more for brushing on top

  • 2 large eggs

Directions

  • First, proof your yeast by adding it to the warm water and half of the sugar. Allow to sit in a warm place until nice foamy.
  • In the meantime, in a large mixing bowl combine the flour, remaining sugar, and salt. Mix to combine and set aside.
  • When the yeast is activated and foamy, pour it into the bowl of flour. To it add the milk, melted butter, and eggs. Beat the eggs slightly in a small bowl or cup before adding them to the bowl. This makes combining them easier.
  • Next, using a wooden spoon mix the dough together. It will be very sticky and you will be tempted to add additional flour but don’t add any more at this stage.
  • Once all the flour is combined, cover the bowl with a clean kitchen towel and place in a warm place to rise until doubled in size.
  • When the dough has risen, preheat your oven to 350 F / 175 C. Line your baking pan with parchment paper and set aside close by.
  • Transfer the dough to a well-floured work surface. and knead just very briefly to release some of the air bubbles. Next, form the dough into a log and cut into 12 equal pieces.
  • Shape each piece into a ball and transfer to the parchment-lined baking dish. Bake at 350 F until browned on top and bake through (about 45 -50 minutes)
  • Brush with softened butter once baked and enjoy warm!
