Nutella Banana Bread

Decadent, soft, with swirls of Nutella

Ahh, banana bread. The perfect baked good when you’ve been pushing around those bananas in your fruit bowl for a while hoping someone would eat them. But they’re still there and turning darker by the minute. Here’s my favorite way to use up those unsightly bananas. With this recipe, the Nutella mainly stays suspended on top of the bread but if you would like chocolate throughout, adding semi-sweet chocolate chips is also an option. If you chose to add chocolate chips, make sure to decrease the amount of sugar you use.

Some prefer banana bread with the traditional addition of walnuts or pecans, while some like plain and simple. Around here, let’s just say we always have a two-pack of Nutella in the cupboard for “just in case”.

The combination of banana and Nutella is nothing new but they work together especially well in this recipe. They both stand out but compliment each other oh so perfectly. Need I say more?

While the directions are pretty straight forward, I do want to mention one important thing. If you’re like me and love to mix and whisk batters, this will require some restraint. You want to mix this mixture just until combined and no more. Otherwise, you will get a tough banana bread and that’s not what you want. Trust me.

Ingredients

  • 4 ripe bananas

  • 3 large eggs

  • 1/2 cup (100 g) granulated sugar

  • 2 tbsp (30 ml) vanilla

  • 1/2 cup (120 ml) sunflower oil (or any flavorless oil)

  • 1/3 cup (100 ml) water

  • 2 1/2 cups (300 g) flour

  • 1/2 tsp (5 g) salt

  • 2 tsp (10 g) baking soda

  • 2-3 tbsp (36- 54 g) Nutella

Directions

  • Spray loaf pan with baking spray. You can use regular cooking spray but I prefer the baking variety. Preheat oven to 350F or 175 degrees.
  • In a large bowl, mash bananas well until there are no large pieces. Add eggs, oil, water, and vanilla. Whisk until all are combined. Set aside.
  • In a separate bowl, combine flour, salt, and baking soda. Mix until well combined and add to the wet mixture. Mix just until you can no longer see the flour. Don’t over mix or your bread will be tough. If adding any nuts, add them at this point and mix into the mixture.
  • Pour the mixture into the prepared loaf pan. Heat Nutella in the microwave or over a heat source for 1 minute or until pourable. Spoon desired amount of Nutella on top of bread mixture. Using a butter knife, swirl Nutella into the bread mixture.
  • Bake for 1 hour at 350F (175 degrees) until a toothpick inserted in the center comes out clean. If the bread starts to brown too much, lay a sheet of aluminum foil on top and continue to bake.
  • Cool and serve warm or room temperature. Store leftovers by wrapping in aluminium foil or plastic wrap.
